Cut the cabbage into wedges. Melt 1 tablespoon of butter in a skillet over medium-high heat. Sear the cabbage wedges for 5–6 minutes until golden brown on both sides. Season with salt and black pepper, then remove the cabbage from the skillet and set aside.
In the same skillet, sauté the sliced onion over medium-low heat for about 10 minutes.
Add the remaining tablespoon of butter and stir in the balsamic vinegar.
Continue cooking for another 7 minutes until the onions are deep golden brown.
Return the cabbage wedges to the skillet
Pour in the beef broth and heavy cream. Add the thyme and season with additional black pepper to taste.
Grate over Gruyère cheese.
Bake in a preheated 400°F oven for about 30 minutes until bubbly and golden brown.
