🍽️ Method
Prepare the Flank Steak (4 steps)
- Slice flank steak thinly against the grain (⅛”).
- Mix water, soy sauce, and baking soda until dissolved.
- Place steak slices in marinade, cover, and refrigerate
- Remove steak, pat dry before velveting.
Original (4 steps)
- In a bowl, mix steak with egg white, MSG, and white pepper.
- Add potato starch (or cornstarch), mix until all slices are coated.
- Stir in neutral oil.
- Refrigerate until ready to cook
Fry the Steak (4 steps)
- Heat neutral oil to 350°F (175°C).
- Add steak slices, immediately agitating to prevent clumping.
- Fry for 2–3 minutes until edges are browned.
- Drain on a grate or paper-lined plate.
Sautee the Veggies (Best made day of assemble) (3 steps)
- Add thinly sliced onions and bell peppers.
- Season lightly with salt (optional)
- Cook until soft and caramelized (5–7 min)
Layer and build the melt (9 steps)
- Shape the cooked steak in an even layer roughly the length and width of your hoagie roll on a hot griddle
- Pile the sautéed veggies directly over the shaped steak strip.
- Layer your cheese evenly across the top so it covers the full length of the roll.
- Top with the roll
- Flip and serve:
- Split hoagie rolls on a foil-lined baking sheet
- Spoon the hot steak-and-veggie mixture evenly across the rolls.
- Spritz and broil:
