🍽️ Method
Make the Dark Sauce (4 steps)
- Add chicken better than bouillion, sugar, and water to a small pot.
- Bra light simmer, whisk until dissolved.
- Remove from heat, add soy sauces, oyster sauce, and rice wine. Whisk until smooth.
- Store in the fridge, covered, for up to 1 month.
Make the Mongolian Sauce (3 steps)
- Add 1 recipe of Dark Sauce to a pot and bring to a simmer.
- Stir in 5 tbsp white sugar until dissolved.
- Remove from heat and cool. Can be stored in fridge for up to 1 month.
Prepare the Flank Steak (4 steps)
- Slice flank steak thinly against the grain (⅛”).
- Mix water, soy sauce, and baking soda until dissolved.
- Place steak slices in marinade, cover, and refrigerate for 2–24 hours (24 hours is ideal).
- Remove steak, pat dry before velveting.
Original (4 steps)
- In a bowl, mix steak with egg white, MSG, and white pepper.
- Add potato starch (or cornstarch), mix until all slices are coated.
- Stir in neutral oil.
- Refrigerate until ready to cook.
Fry the Steak (4 steps)
- Heat neutral oil to 350°F (175°C).
- Add steak slices, immediately agitating to prevent clumping.
- Fry for 2–3 minutes until edges are browned.
- Drain on a grate or paper-lined plate.
Blanch the Broccoli (3 steps)
- Bring a pot of water to boil.
- Add broccoli florets, blanch 1–2 minutes until tender-crisp.
- Shock in ice water or drain and set aside.
Stir Fry Assembly (8 steps)
- Heat 1 tsp neutral oil in a wok over medium-high.
- Add garlic, ginger, and scallions; stir-fry 10–20 seconds until fragrant.
- Add Mongolian Sauce and bring to a light simmer.
- Add fried flank steak, tossing to coat.
- Stir the cornstarch slurry, then drizzle into wok while stirring. Cook until sauce thickens and clings to beef.
- Add broccoli, toss everything together.
- Turn off heat, drizzle with toasted sesame oil, toss once more.
- Serve immediately with rice.
